Store-bought ice cream is definitely a treat, but making your own ice cream can also be a fun experiment. Here are three healthy ice creams that you can make within 15 minutes with only a blender.
Dark chocolate peanut butter swirl
(makes 3 cups)– This is a chocolate ice cream with a banana base and is therefore virtually guilt free. You will need;
- ½ c plain Greek yogurt
- 4 frozen bananas
- ¼ c maple syrup
- ⅓ c cocoa powder
- 2 Tbsp. peanut butter
Start by combining the first 4 ingredients into a blender and blend till the mixture is creamy. Then add the peanut butter and pulse a few times. Your ice cream is in ready to serve.
Coconut Bliss
(makes 3 cups) – This is a creamy tropical ice cream that uses coconut cream and therefore is dairy free.
- ½ c canned coconut milk
- ¼ c unsweetened flaked coconut
- ¼ c maple syrup
- ½ tsp. vanilla
- 2 frozen bananas
Start by mixing all the ingredients in a blender and blend until thick. Place the mixture in a loaf pan for 4 hours in the fridge.
Green tea pistachio Ice Cream
(makes 3 cups) – This is a vegan dieter dream dessert and is packed antioxidants.
- 1 c cashews
- ¼ c maple syrup
- 2 Tbsp. fresh lemon juice
- ¼ c canned coconut or almond milk
- 1 Tbsp. Matcha green tea powder
- 2 frozen bananas
- ⅓ c pistachio pieces
Start by soaking the cashews in water overnight. Then rinse and drain. Then blend together cashews and other ingredients until thick and place in the freezer for four hours until it reaches the desired consistency.
